Enchilada Fiesta Casserole
Crockpot Meal, Serves 6-8
Ingredients: Black beans*, brown rice*, diced tomatoes*, corn (non-gmo), bell pepper*, enchilada sauce (organic tomatoes, organic onions, organic lime juice, garlic, spices, olive oil, sea salt, ancho chili peppers, date paste), onions*, garlic*, chili powder*, cumin*, himalayan salt, black pepper*, love. Certified Organic*
Directions: Remove from freezer the night before serving and place in fridge to defrost. Place contents of bag in crockpot, add 2 1/4 cups of water, mix and cover. Cook on low for 7-8 hours or until the rice is tender. 10 minutes before you're ready to serve squeeze the juice of 1 lime and mix.
Optional: Sprinkle on top with cheddar cheese, cover and let sit in the crockpot for 10 minutes or until cheese melts.
Serving Instructions: This versatile recipe can be served with flour wraps, on it's own or part of a salad bowl. Serve with your favourite toppings, sour cream, avocado or guacamole and lettuce.
